This is JACKY FRENOT, Monsieur Jacky, the boss of our Frozzie Kitchens, the man who has spent more years down under than in his originnal Normandie. He has so many years of experience in a kitchen that we will not even tell you... To put it simply, he arrived in Australia
by boat just after the last convicts... As he is now more Australian than French he is at the origin of what we are at chez Olivier: "FROZIE", a very special type of Frog-aussie, a combination of secular tradition and a love for all things new, using always the best local products when they are available.
Jacky is also an adept of Transcendental Meditation and we believe that a lot of his generous soul and spirit goes into his highly enjoyable food.
Before joining us here nearly three years ago he has worked in quite a few iconic venues in Melbourne and prior to that owned his own restaurants. The first one was in Beaumaris, called " Ma maison", the other one was in Mornington, called "La Banque", where he was cellaring his best wines in the old vault...
