
	Our Team & Friends At Chez olivier we believe in individuals! We believe that the quality of your experience in any of our venues relies on the quality of the following people: This is JACKY FRENOT, Monsieur Jacky, the head of our kitchen, the man who has spent more years down under than in his originnal Normandie. He has so many years of experience in a kitchen that we will not even tell you... To put it simply, he arrived in Australia by boat just after the last convicts... As he is now more Australian than French he is at the origin of what we are at chez Olivier: "FROZIE", a very special type of Frog-aussie, a combination of secular tradition and a love for all things new. Jacky is also an adept of Transcendental Meditation and we believe that a lot of his generous soul and spirit goes into his highly enjoyable food. Before joining us here nearly three years ago he has worked in quite a few iconic venues in Melbourne and prior to that owned his own restaurants, one in Beaumaris called " Ma maison" the other one in Mornington called "La Banque" where he was cellaring his best wines in the old vault... This is FLORIAN DANIEL, Monsieur Flo Jo, so nicknamed as he is the fastest on the floor and will run everywhere to make sure that everyone is happy. He is your host at Le bistro, supervising is team of Frenchies, making sure that everything runs as smoothly as possible. Some call Le Bistro "Chez FLOlivier" showing how much he made this place is... He is originally from Britanny but is also trying to make Australia home... This is OLIVIER NORMANDIN, Monsieur Zolive, the one who claims these places to be his. Originally from Bordeaux but on his way to become an Aussie (has been approved for citizenship on the 4th of July 2008). He wants to call Australia home so much that he put his name on the door of two establishment in the suburbs of Melbourne. Chez Olivier is a reflection on his love for genuinelly authentic traditionnal and generous French food accompanied by some excellent wines both from his old and new countries. When we say that we believe in people we also think about you! All kind of people who already appreciated the experience we offer or those who will sooner or later experience it as well. We believe that there are out there some people like us who do want a genuine and generous experience combining high quality and relaxed atmosphere. We can't wait to meet you!
