Kangaroo fillet demi-glace with mushroom ragu and sweet potato mash

 

Ingredients: fresh kangaroo fillets, marinated in oil, garlic, peppercorns, lemon, and a variety of fresh herbs;

ceps (porcini), field, oyster, and shitake mushrooms; sweet potato.

 

A wide variety of fresh seasonal mushrooms, including ceps (porcini), field, oyster, shitake, and other mushrooms, are sliced and lightly tossed with jus to mingle their delicate flavours; marinated kangaroo fillets are oven-roasted to your liking, sliced, and served with sprinkling of fresh herbs; the dish is completed by sweet potato mash, simple, fluffy, and steaming hot.

 

It arrives at your table as a subtle combination of earthy browns and ochres. Deep, rich aromas of the mushroom ragu and marinade hit your nose. Varied textures of fillets, mushrooms, and the mash complement each other as their flavours and textures mingle and melt in your mouth.

 

We recommend matching this dish with a glass of Pinot Noir: it complements the rich but delicate earthy flavours, does not overpower the complex palate of the dish, and beautifully cleanses between the generous mouthfuls!

This wine is one of our local favourites. It comes from a family-owned vineyard near Tuerong on the Mornington Peninsula. This hand-crafted reserve Acappella Pinot Noir exhibits varietal aromas of cherries, berries, and spice with forest floor and subtle oak overtones. The palate delivers beautiful complexity, texture, and elegant tannins.

2005 Bouchard Père et Fils Réserve Bourgogne Pinot Noir, Château de Baune, France

The renowned Bouchard Père et Fils vineyards were founded in 1731 in the heart of the Côte d’Or (where the famous wines of Burgundy come from). Its cellar door is located in the old 15th Century Château de Baune, which houses their spectacular wine collection. The wine is brilliant cherry red in colour, and has remarkable red fruit aromas of cherry and kirsch with notes of lime and mint. It has been described as “a plump wine with a lot of fruit and a delicate nose of wood; good persistence, harmonious and well-balanced,” and is perfect accompaniment to our dishes.
